Method
Marinating
- Combine the red wine, chopped onions, carrots, celery, and spices in a bowl. Let the venison soak for at least 12 hours.
Browning
- After marination, remove the venison and pat it dry. Heat butter in a large pot over medium heat.
- Add the venison pieces in batches, browning them on all sides until they are dark brown.
Cooking
- Once browned, remove the venison and add the onions and marinated vegetables to the pot. Cook until softened.
- Stir in the tomato paste and cook briefly, scraping the bottom of the pan to incorporate the flavors.
- Pour in the marinade, bringing it to a gentle simmer.
- Add stock, bay leaves, and juniper berries. Reduce heat, cover, and let it simmer for 2 to 2.5 hours until tender.
- If the sauce needs thickening, remove the lid and simmer longer, adjusting seasoning with salt and pepper.
Serving
- Ladle the Hirschgulasch into warm bowls, garnishing with fresh parsley. Serve with spätzle or mashed potatoes.
