Ingredients
  

For the Dough
  • 2 cups all-purpose flour
  • 1 cup ground almonds or hazelnuts Use ground almonds for a traditional flavor.
  • ½ cup powdered sugar
  • 1 cup unsalted butter, cold and diced Quality butter will enhance flavor.
  • 1 large egg yolk
For Dusting
  • Vanilla sugar Can substitute with sugar mixed with vanilla extract.

Method
 

Prepare the Dough
  1. In a large mixing bowl, combine the flour, ground nuts, and powdered sugar.
  2. Add the cold butter and egg yolk; mix until a soft dough forms, being careful not to overmix.
Chill the Dough
  1. Wrap the shaped dough in plastic wrap and refrigerate for at least 30 minutes.
Preheat the Oven
  1. Preheat your oven to 350°F (175°C).
Shape the Cookies
  1. Roll portions of the chilled dough into thin logs and cut into 2-inch pieces, shaping each into a crescent.
Bake
  1. Place the crescents on a baking sheet lined with parchment paper and bake for 10 to 12 minutes until lightly golden.
Dust with Sugar
  1. Allow the cookies to cool for about 5 minutes before dusting with vanilla sugar while still warm.

Notes

Store leftovers in an airtight container. They can be frozen for up to three months.
