Ingredients
  

Wet Ingredients
  • 1 1/2 cups warm water Should be warm, not hot.
  • 2 1/4 tsp active dry yeast
  • 2 tbsp molasses Can substitute with brown sugar or maple syrup.
Dry Ingredients
  • 3 cups rye flour Opt for high-quality rye flour for richer flavor.
  • 1 cup bread flour
  • 1 tbsp cocoa powder
  • 2 tsp salt
  • 1 tsp caraway seeds (optional) Can be substituted with fennel seeds.

Method
 

Preparation
  1. In a mixing bowl, combine warm water, active dry yeast, and molasses. Let it stand for about five minutes until the mixture becomes frothy.
  2. In a separate bowl, whisk together rye flour, bread flour, cocoa powder, salt, and optionally, caraway seeds.
  3. Gradually add the dry mixture to the activated yeast mixture, stirring until a dough forms.
  4. Transfer the dough onto a floured surface and knead for about 10 minutes until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a damp cloth, and place it in a warm area for about 1 to 1.5 hours, or until it doubles in size.
  6. Once risen, punch down the dough to release excess air and shape it into a loaf.
  7. Place the shaped loaf in a greased loaf pan and let it rise again for about 30-45 minutes.
Baking
  1. Preheat your oven to 375°F (190°C). Bake for 45-50 minutes until it’s deep brown and sounds hollow when tapped.
  2. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
  3. Let it cool completely before slicing.

Notes

Store in an airtight container at room temperature for about 4-5 days. Freeze slices for up to 3 months. For a softer crust, brush with melted butter immediately after baking.
