Ingredients
  

For the Pie Crust
  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, chilled and diced Use vegan butter for a dairy-free option.
  • 1/4 cup ice water
For the Apple Filling
  • 1/2 cup granulated sugar Can substitute brown sugar for deeper flavor.
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 6-8 pieces apples, peeled, cored, and sliced Granny Smith or Honeycrisp are recommended.
  • 2 tablespoons all-purpose flour For thickening the filling.
  • 2 tablespoons butter Add richness to filling.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix together the flour, diced butter, and ice water until a dough forms. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 4 hours or overnight.
Assembling the Pie
  1. Roll out one dough disk until it fits your pie pan; ensure the edges hang slightly over the sides.
  2. In another bowl, toss the sliced apples with sugar, cinnamon, nutmeg, and flour. Pour the mixture into the prepared crust, and dot with butter.
  3. Roll out the second dough disk, place it over the apple filling, crimp the edges together, and make slits in the top for steam to escape.
Baking
  1. Bake in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and bake for an additional 35-45 minutes.
  2. The pie is done when apples are soft and the crust is golden brown.
Serving
  1. Allow the pie to cool before slicing for easier serving.

Notes

Store leftover pie in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in a 350°F (175°C) oven.
