  • 200 g butter Use high-quality butter for better flavor.
  • 200 g sugar
  • 6 pieces eggs (separated) Use large eggs.
  • 120 g flour Regular or almond flour for gluten-free.
  • 60 g cornstarch
  • 1 tsp vanilla extract
  • 150 g apricot jam Warm for glazing.
  • 200 g dark chocolate Opt for high-quality chocolate.

Method
 

Preparation
  1. Preheat your grill or oven and line and grease a springform pan carefully.
  2. In a mixing bowl, beat the butter and sugar until light and fluffy (about 5 minutes).
  3. Gradually add the egg yolks, mixing in each until fully incorporated.
  4. In another bowl, combine the flour and cornstarch, then fold into the butter mixture until smooth.
  5. In a separate bowl, whip the egg whites until soft peaks form and gently fold into the batter.
Layering and Cooking
  1. Spread a thin layer of batter (about 1/4 inch thick) evenly in the pan.
  2. Grill the layer until golden brown (about 3-5 minutes).
  3. Repeat layering and grilling until all the batter is used, ensuring each layer is cooked properly.
  4. Let the cake cool entirely before removing it from the pan.
  5. Brush the cooled cake with warm apricot jam and coat with melted dark chocolate.

Notes

For dietary adjustments, substitute dairy-free butter and chocolate. For a lighter version, use applesauce instead of half the butter. To make it vegan, replace eggs with a flaxseed mixture and use plant-based products.
