Main Ingredients
  • 8 oz Camembert or Brie, softened at room temp This is the base of the spread.
  • 2-4 tbsp Cream cheese (optional) Adds extra creaminess.
  • 2 tbsp Soft butter Helps in mashing the cheese.
  • 2-3 tbsp Finely chopped onion or shallot Provides a bite.
  • 1-2 tsp Sweet paprika For warmth and flavor.
  • 1/4 tsp Caraway seeds Optional, but traditional.
  • 1 pinch Salt Taste first since cheese varies.
  • few grinds Black pepper Adds spiciness.
  • 1-3 tbsp Beer To loosen the spread.
  • to taste Optional extras: lemon juice, chili flakes, chopped chives Customize the flavor.

Method
 

Preparation
  1. Let the cheese sit out for 30 to 60 minutes so it softens.
  2. In a bowl, mash Camembert or Brie with the butter using a fork. Add cream cheese if you want it smoother.
  3. Stir in onion, paprika, pepper, and caraway if using.
  4. Add beer a little at a time to achieve a spreadable texture.
  5. Taste and adjust salt, paprika, or onion to your preference. Top with extra paprika and possibly chives.
  6. Chill for 20 minutes for better flavor or serve immediately.

Notes

Serve slightly cool, best enjoyed with soft pretzels, rye bread, radishes, pickles, or cold meats. Can be prepared ahead of time and tastes better after a few hours in the fridge.
