Preparation
- Soak the guajillo chilies in hot water until soft, about 15 minutes.
Making the Sauce
- In a blender, combine the softened chilies, chipotle peppers, minced garlic, cumin, oregano, and beef broth. Blend until smooth.
Braising the Beef
- In a large pot, heat oil over medium-high heat and sear the beef chuck roast until browned on all sides.
- Pour the chili sauce over the beef and add remaining beef broth. Bring to a boil, cover, and braise for 2-3 hours until tender.
Final Steps
- Remove the beef, shred with two forks, and strain the braising liquid for a consomé.
- Dip each tortilla in the warm consomé, fill with shredded beef and cheese, and fry until crispy.
Serving
- Serve with a side of warm consomé, garnished with cilantro and lime wedges.
Notes
