Preparation
- Boil the potatoes whole, with skins on, until just tender (15-20 minutes). Drain and let steam dry.
- Once cooled, slice the potatoes about a quarter inch thick.
Cooking
- In a large skillet, cook the bacon until browned. Remove bacon and leave some fat in the pan.
- Add onions to the skillet and cook until softened and golden.
- Add butter (or oil if needed) and lay potato slices in a single layer. Let them brown without stirring.
- Once browned, flip the potatoes gently and season with salt and pepper.
- Add bacon back to the skillet, adjust seasoning if needed, and finish with parsley if desired.
Notes
Pair with a hearty main dish to soak up gravy. A fried egg on top can turn it into a full meal.
