Ingredients
  

Main Ingredients
  • 2 pounds potatoes Waxy potatoes like Yukon Gold or red potatoes work best.
  • 5-7 slices bacon, chopped
  • 1 medium onion, thinly sliced
  • 2-3 tablespoons butter or a mix of butter and oil
  • to taste salt and black pepper Seasoning to taste.
  • optional chopped parsley, a pinch of marjoram, or a tiny bit of garlic Optional for extra flavor.

Method
 

Preparation
  1. Boil the potatoes whole, with skins on, until just tender (15-20 minutes). Drain and let steam dry.
  2. Once cooled, slice the potatoes about a quarter inch thick.
Cooking
  1. In a large skillet, cook the bacon until browned. Remove bacon and leave some fat in the pan.
  2. Add onions to the skillet and cook until softened and golden.
  3. Add butter (or oil if needed) and lay potato slices in a single layer. Let them brown without stirring.
  4. Once browned, flip the potatoes gently and season with salt and pepper.
  5. Add bacon back to the skillet, adjust seasoning if needed, and finish with parsley if desired.

Notes

Pair with a hearty main dish to soak up gravy. A fried egg on top can turn it into a full meal.
