  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 cup milk Dairy or almond milk can be used.
  • 1 can cream of mushroom soup Substitute with gluten-free if necessary.
  • 2 cups shredded cheddar cheese For a spicy kick, consider using pepper jack cheese.
  • 1 medium onion, chopped Adds great flavor to the beef.
  • to taste salt and pepper Always season each layer.
  • optional garlic powder, paprika, or other seasonings Add for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef with the chopped onion. Drain any excess fat.
  3. In a large bowl, blend the cooked beef with the cream of mushroom soup and milk. Season with salt and pepper, and optional seasonings.
  4. In a greased baking dish, layer half of the sliced potatoes, followed by half of the beef mixture and half of the cheese. Repeat with remaining ingredients.
Baking
  1. Cover the dish with aluminum foil and place it in the oven. Bake for 45 minutes.
  2. Uncover and continue baking for an additional 15-20 minutes until the cheese is bubbling and golden.
Serving
  1. Let the casserole cool slightly before serving. Slice into squares and enjoy with a side salad.

Notes

Leftover casserole can be stored in an airtight container in the fridge for 3 to 5 days. For freezing, keep it for up to 3 months.
