  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
Wet Ingredients
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
Mix-ins
  • 1 cup peeled and chopped apples Firm varieties like Granny Smith or Honeycrisp are recommended.
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined, then set aside.
  3. In another bowl, cream the butter and sugars together until light and fluffy. Add eggs and vanilla, mixing well.
  4. Gradually add the dry ingredients into the wet mixture, alternating with the apples, until just combined.
  5. Fold in the nuts if using.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for about 60-70 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow cooling in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For the best experience, serve warm with a pat of butter or a drizzle of honey. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
