Preparation
- In a bowl, stir together quark, eggs, sugar, vanilla, salt, and lemon zest if using.
- Mix flour and baking powder, then stir it into the wet mixture until you have a soft, slightly sticky dough. If it feels like thick batter, that is fine. Do not overmix.
Frying
- Use a small pot or deep pan with enough oil so the balls can float. Heat to about 175°C (350°F).
- Scoop small portions using two spoons or a small cookie scoop and gently drop them into the oil.
- Fry in batches so you do not crowd the pot. Turn them as they cook, about 3 to 5 minutes total, until deep golden.
- Let them drain briefly on paper towel, then roll in sugar while still warm.
