Method
Cooking the Base
- In a large pot over medium heat, add the ground beef and pork sausage. Sauté until browned, about 5-7 minutes, draining any excess fat.
- Stir in the chicken or beef stew meat and continue cooking for another 5 minutes until the meat is seared.
Adding Aromatics
- Mix in the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
Combine Ingredients
- Add the drained beans, corn, diced tomatoes, beef broth, chili powder, cumin, salt, and pepper. Stir everything together.
Simmering
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes. Stir occasionally.
Serving
- Ladle the Cowboy Stew into bowls and serve hot with optional toppings.
Notes
Leftovers can be stored in an airtight container for up to four days or frozen for three months. To reheat add broth if it thickens too much.
