  • 1 medium onion, grated

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2-3 tbsp vegetable oil (for frying)

Method
 

Preparation
  1. Start by peeling the potatoes and onions. Using a box grater or food processor, grate both and transfer them to a large bowl.
  2. Place the grated potatoes and onion in a clean dish towel or cheesecloth. Squeeze firmly to remove excess moisture.
  3. In the same bowl, combine the grated mixture with eggs, flour, salt, and pepper. Stir until well combined.
Cooking
  1. In a large frying pan, pour in vegetable oil and heat it over medium heat.
  2. Scoop spoonfuls of the batter into the hot oil, flattening them with the back of the spoon. Fry for about 3-4 minutes until golden brown.
  3. Carefully turn the pancakes over and fry for an additional 3-4 minutes until crispy and well-browned.
  4. Remove pancakes and place them on a paper towel to drain excess oil. Serve hot.

Notes

Store leftovers in an airtight container for up to 3 days. Freeze them for up to 2 months between layers of parchment paper. Reheat in a skillet for the best texture.
