  • 1 medium onion, thinly sliced Use white onion for classic flavor or red onion for a sweeter taste.

  • 3 tablespoons neutral oil (sunflower or canola) Start with a small amount, adjust to taste.
  • 1 tablespoon pickle brine Adds extra punch to the salad.
  • to taste salt
  • to taste black pepper
Optional Add-ins
  • 1 cup sliced pickles Cornichons or dill pickles can be added.
  • 1 tablespoon chives, chopped
  • a pinch sugar Optional, to balance the sharpness.
  • 1 teaspoon mild mustard For extra flavor in the dressing.

Method

Preparation
  1. Slice the sausage into thin strips or half moons.
  2. Slice the onion thinly. Soak in cold water for 10 minutes if too strong.
  3. In a bowl, mix vinegar, oil, pickle brine, salt, pepper, and sugar if using.
  4. Toss the sausage and onions with the dressing and let sit for at least 15 to 20 minutes.

Notes

Letting the salad sit allows the flavors to blend. Store in the fridge for up to 2-3 days. Do not freeze to maintain texture.
