  • 1 cup short grain rice Short grain pudding rice, Arborio, or Japanese short grain rice for creaminess.
  • 4 cups milk Use whole milk for rich flavor, or substitute with oat milk for a dairy-free option.
  • 1/4 cup sugar Adjust sweetness to taste.
  • 1 pinch salt Enhances flavor.
  • 1 teaspoon vanilla extract Adds aroma and flavor.
  • 1 tablespoon butter Optional, adds extra creaminess.

Cooking
  1. Add milk to a medium pot and bring it close to a gentle simmer, not a full rolling boil.
  2. Stir in rice and a pinch of salt, then lower the heat for a gentle simmer.
  3. Stir often, especially along the bottom to prevent sticking.
  4. Cook until the rice is soft and the pudding is creamy, about 20 to 30 minutes.
  5. Near the end, stir in sugar and vanilla. Allow to sit for 5 minutes to thicken.

Notes

Store leftovers in an airtight container in the fridge and consume within 3 days. Reheat gently, adding a splash of milk to restore creaminess. Freezing is possible but may alter texture.
