- Boil the eggs: Place eggs in a pot, cover with cold water, and bring it to a gentle boil. Once boiling, turn off the heat, cover the pot, and let sit for about 10 to 12 minutes before draining and cooling in cold water.

- Chop the pickles and apple into small pieces. If concerned about browning, toss the apple with a little lemon juice.
- In a bowl, mix together the mayonnaise, mustard, and a splash of pickle juice. Adjust seasoning if necessary.
- Fold in the chopped eggs, pickles, apple, and onion or chives. Season with pepper and paprika to taste.
