  • 2 pounds beef, cut into cubes Choose well-marbled cuts for tenderness.
  • 2 tablespoons vegetable oil For browning the beef.
  • 2 onions chopped
  • 2 cloves garlic, minced
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 4 cups beef broth Homemade broth is preferred for richer flavor.
  • 1 can (14 oz) diced tomatoes
  • 2 bell peppers chopped Add in the last 30 minutes of cooking.
  • to taste Salt and pepper Season at the end for best results.
  • 2 tablespoons flour (optional for thickening) Can substitute with cornstarch for gluten-free.
  • Chopped parsley for garnish Adds a fresh touch.

Method
 

Preparation
  1. In a large pot, heat vegetable oil over medium heat. When shimmering, add beef cubes and brown them on all sides, about 5-7 minutes. Remove and set aside.
  2. In the same pot, add chopped onions and minced garlic. Sauté for 4-5 minutes until onions are soft and translucent.
  3. Stir in paprika and caraway seeds, cooking for 1 minute until fragrant.
  4. Return the browned beef to the pot, pour in the beef broth, and add diced tomatoes. Bring to a boil, reduce heat to low, and simmer, covered, for 1.5 to 2 hours.
  5. In the last 30 minutes of cooking, add the chopped bell peppers for added sweetness.
  6. Season with salt and pepper to taste. If a thicker sauce is desired, mix flour with a bit of water and stir into the goulash to avoid lumps.
Serving
  1. Serve hot, garnished with chopped parsley. Enjoy with crusty bread or over egg noodles.

Notes

This dish tastes even better the next day. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. For a lighter version, consider using chicken or adding more vegetables.
