Preparation
- In a small pot, gently warm honey, brown sugar, and butter just until melted and smooth. Do not boil it. Let it cool for 10 minutes.
- In a big bowl, whisk together flour, baking powder, salt, cinnamon, ginger, and cloves.
- Stir the warm honey mixture into the dry ingredients, add an egg, and a splash of milk if the dough feels too stiff.
- Cover and chill the dough for at least 2 hours, or overnight if possible.
Baking
- Scoop the chilled dough onto a lined baking sheet, leaving space between each scoop.
- Bake until the tops are set but still soft, usually 9 to 11 minutes depending on the size.
Finishing
- Brush with a simple powdered sugar glaze while warm, or let the cookies cool and dip them in melted chocolate.
Notes
To keep cookies soft, store in an airtight container and consider adding a piece of bread or wedge of apple. For gifting, stack with parchment paper between layers.
