Main ingredients
  • 2 pounds Waxy potatoes (like Yukon Gold or red potatoes) These potatoes hold their shape well.
  • 4 slices Bacon For smoky flavor and richness.
  • 1 medium Onion, chopped For the savory backbone.
  • 1 cup Chicken or vegetable broth To make the dressing rounded.
  • 1/4 cup Vinegar (apple cider or white vinegar) For tanginess.
  • 1 tablespoon Mustard Adds depth to the flavor.
  • 1 teaspoon Sugar To balance the tang.
  • to taste Salt and black pepper For seasoning.
  • 1/4 cup Fresh herbs (parsley or chives), chopped Optional for garnish.

Method
 

Cooking Potatoes
  1. Put whole potatoes in a pot, cover with cold water, salt it well, and simmer until a fork slides in easily, usually 15-20 minutes for small potatoes.
Preparation
  1. Drain the potatoes and let them cool enough to handle. Peel if desired and slice them into coins or chunks.
Cooking Bacon and Onion
  1. In a skillet, cook chopped bacon until crisp. Remove the bacon, keeping a couple spoonfuls of drippings in the pan. Add chopped onion and cook until soft and golden.
Make the Dressing
  1. To the onions, add broth, vinegar, sugar, mustard, salt, and pepper. Let it bubble for one minute.
Combine Ingredients
  1. Put potatoes in a large bowl and pour the hot dressing over them. Add bacon back in and gently toss.
  2. Let it sit for 10 minutes, then toss again.
Finish the Salad
  1. Add chopped herbs if you have them, then taste and adjust flavors with more vinegar, salt, or broth as needed.

Notes

For a saucier salad, add more broth. For sharper flavor, add a bit of vinegar at the end. Can be served warm or at room temperature.
