Main Ingredients
  • 2 pounds waxy potatoes (New Potatoes or Yukon Gold) Opt for quality potatoes for best texture.
  • 6 slices bacon Can be substituted with smoked tempeh for a vegetarian version.
  • 1/2 cup white vinegar
  • 1/4 cup water Can use vegetable broth for a vegan version.
  • 1/4 cup granulated sugar Alternatively, use a sugar substitute if desired.
  • 1 medium onion, finely chopped
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Place the potatoes in a large pot and cover them with water. Bring to a boil and cook until tender, about 10-15 minutes.
  2. Drain the potatoes and let them cool slightly. Peel while warm and cut into bite-sized pieces.
Cooking
  1. In a large skillet, cook the bacon over medium heat until crispy. Reserve the fat in the pan.
  2. Remove the bacon and add the finely chopped onion to the skillet. Sauté until softened, about 3 minutes. Stir in vinegar, water, and sugar, bringing to a simmer until sugar dissolves.
Combining
  1. In a large bowl, toss the warm potato pieces with crumbled bacon and warm dressing. Season with salt and pepper to taste and garnish with chopped parsley.

Notes

This salad can be served warm or at room temperature. Store leftovers in an airtight container for up to 3 days.
