- In a large mixing bowl, cream together the softened butter and powdered sugar until it's fluffy and pale.
- Gradually add in the vanilla extract and a pinch of salt, mixing until incorporated.
- Slowly sift in the flour and ground almonds and stir with a wooden spoon until a soft dough forms.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
Baking
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Take small portions of the chilled dough and roll them into logs about 1 inch in diameter, bending them gently to form crescent shapes.
- Place the formed cookies onto the prepared baking sheet and bake for about 12-15 minutes, or until lightly golden.
- Once cool, dust the cookies with powdered sugar and they are ready to enjoy!
Notes
Ensure your butter is at room temperature for easier mixing. If the dough is too sticky, add a little more flour, but be cautious not to overdo it. Baking times should be monitored to maintain the ideal texture. Optional variations include adding lemon zest or using different nuts.
