Method
Dough Preparation
- Mix flour, salt, and eggs in a bowl. Add a splash of water only if it feels dry. Knead until smooth.
- Cover the dough and let it rest for about 30 minutes.
Filling Preparation
- Cook the onions in a pan until soft.
- Squeeze the cooked spinach to remove excess water.
- In a mixing bowl, combine ground meat, spinach, cooked onions, parsley, egg, and seasonings. Add soaked bread (or breadcrumbs) and mix until well combined.
Assembly
- Roll the dough thinly on a lightly floured surface.
- Spoon filling into a line on the dough, leaving space around it.
- Fold the dough over, press out air pockets, and seal the edges. Cut into large rectangles or desired shapes.
Cooking
- In a large pot, bring broth or salted water to a gentle simmer.
- Cook the Maultaschen until they float and look set, about 10 to 15 minutes depending on size.
Optional Pan Frying
- After simmering, slice Maultaschen and pan fry in a little butter until golden.
Notes
Keep the dough covered while working to prevent drying. Test one pocket first to adjust seasoning. Maultaschen can be made vegetarian using spinach, mushrooms, and breadcrumbs.
