Ingredients
  

Cake Ingredients
  • 1 cup honey Use high-quality honey for best flavor.
  • ½ cup unsalted butter Melted and cooled.
  • 2 cups all-purpose flour Can substitute with gluten-free flour.
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 2 teaspoons gingerbread spice
  • 1 pinch salt
  • 2 large eggs
  • ½ cup raisins or chopped nuts Optional.
Topping Ingredients
  • ½ cup apricot jam Warmed for spreading.
  • 1 cup semi-sweet chocolate Melted with butter for glaze.
  • 2 tablespoons butter Used for melting with chocolate.

Method
 

Preparation
  1. In a pot over low heat, melt the honey and butter together.
  2. Allow the mixture to cool slightly.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, gingerbread spice, and salt.
Mixing
  1. Beat the eggs in a large mixing bowl, then add the cooled honey mixture. Gradually fold in the dry ingredients until smooth.
  2. Prepare a 9x13 pan by lining it with parchment paper.
Baking
  1. Pour the batter into the prepared pan and bake at 350°F (175°C) for 25-30 minutes, until a toothpick comes out clean.
  2. Let the cake cool completely in the pan.
Glazing
  1. Spread the warmed apricot jam over the cooled cake.
  2. Melt the chocolate with butter and drizzle it over the cake.
  3. Allow the glaze to set before cutting.

Notes

Serve with whipped cream or vanilla ice cream for an indulgent treat. Store leftovers in an airtight container for up to five days at room temperature.
