  • 2 lbs starchy potatoes (Russet or mehlig kochende) Choose starchy varieties for a fluffy finish.
  • 1/2 cup potato starch (or cornstarch as a substitute) Cornstarch is a gluten-free option.
  • 1 large egg (optional) Omit for a vegan version.

Preparation
  1. Begin by boiling the potatoes in salted water until they are tender, which should take about 20-25 minutes.
  2. Drain the potatoes well and set them aside to cool for a few minutes.
  3. Once the potatoes are cool enough to handle, peel and mash them in a mixing bowl until smooth.
  4. In the same bowl, integrate potato starch, a pinch of salt, and the egg if using. Mix gently until it forms a cohesive dough.
  5. Shape the dough into 2-inch balls with your hands. Dust with more potato starch if too sticky.
  6. In a large pot, bring salted water to a gentle simmer. Drop the dumplings into the water, ensuring space for them to move freely.
  7. Cook until they float, taking about 10-15 minutes, which indicates they are done.

Notes

Serve with rich gravies; can be stored in a fridge for up to 3 days or frozen for up to 3 months. Reheat by steaming for best texture.
