Preparation
- Bring a big pot of salted water to a gentle boil.
- Mix your batter until it is thick and stretchy. Let it rest for about 10 minutes while the water heats.
Cooking
- Push the batter through your spätzle tool into the water. Work in batches to avoid crowding the pot.
- The noodles float when they are done, usually in 2 to 3 minutes. Scoop them out with a slotted spoon and set aside.
- In a pan, sauté sliced onions in butter until golden and a little crisp.
- Layer noodles and cheese in a warm pan or baking dish. Add a little butter if desired. Warm it gently until the cheese melts.
- You can also bake it for 10 minutes to help everything melt together.
Notes
Taste as you go, especially with salt, since cheese varies a lot in saltiness. Serve with something tangy on the side to balance the richness.
