  • 2 cups all-purpose flour High-quality flour is recommended.
  • 3 large eggs
  • ½ cup milk Consider using low-fat or dairy-free alternatives.
  • 1 tsp salt
  • 1 pinch nutmeg A pinch adds flavor.

For the cheese topping
  • 2 cups grated Emmentaler cheese Choose high-quality cheese for the best flavor.
For the onions
  • 2 large onions Thinly sliced.
  • 2 tbsp butter Used for caramelizing the onions.

Method
 

Preparation
  1. In a large mixing bowl, combine the flour, eggs, milk, salt, and nutmeg. Whisk until smooth and let the batter rest for about 10 minutes.
Cooking the spaetzle
  1. Bring a large pot of salted water to a boil. Press the batter into the boiling water using a spaetzle maker or colander.
  2. Cook for about 2-3 minutes, or until the noodles float to the surface.
  3. Remove the noodles with a slotted spoon and drain in a colander.
Caramelizing the onions
  1. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook for about 15 minutes, stirring frequently, until golden brown.
Combining and serving
  1. Add the cooked spaetzle to the skillet with the onions. Stir in the grated Emmentaler cheese until it melts and coats the noodles.
  2. Season with salt and pepper to taste and serve immediately.

Notes

Käsespätzle can be stored in an airtight container for up to three days or frozen for up to two months. Reheat with a splash of milk to restore creaminess.
