  • 2 tsp baking powder
  • ½ cup milk Almond or oat milk can be used for a dairy-free version.
  • ¼ cup unsweetened cocoa powder
Chocolate Glaze
  • 1 cup dark or semi-sweet chocolate, chopped Use high-quality chocolate.
  • 2 tbsp butter
  • 2 tbsp milk

Method

Preparation
  1. In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3 minutes.
  2. Beat in the eggs one at a time, mixing well after each addition.
  3. Stir in the almond and rum extracts, if using.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Gradually add the flour mixture to the wet ingredients, alternating with the milk.
Batter Preparation
  1. Divide the batter into two portions. Stir cocoa powder into one half.
  2. Grease a bundt pan and alternate layers of vanilla and chocolate batter; swirl to create a marbled effect.
Baking
  1. Preheat your oven to 350°F (175°C) and bake the cake for 45-55 minutes.
  2. Allow the cake to cool in the pan for 10 minutes before removing to a wire rack.
Glazing
  1. In a saucepan, melt together chocolate, butter, and milk over low heat until smooth.
  2. Pour the chocolate glaze over the cooled cake and let it set before slicing.

Notes

For added flavor, consider using a mix of chocolates. For a lighter cake, replace some butter with applesauce. Store leftovers in an airtight container for up to 5 days.
