Preparation
  1. Begin by draining the matjes herring fillets gently and patting them dry with a paper towel.
  2. In a bowl, mix together the sour cream, mayonnaise, apple cider vinegar, sugar, and mustard until well combined.
  3. Layer the sliced onions at the bottom of a serving dish.
  4. Place the drained herring fillets over the onions, ensuring they are nicely arranged.
  5. Pour the prepared sauce evenly over the herring and onions, gently spreading it to ensure everything is coated.
  6. Cover the dish with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld together.
