Ingredients
  

For the Cake
  • 1.5 cups all-purpose flour 1 1/2 cups (190g) of flour for the cake batter
  • 0.5 cups butter, at room temperature 1/2 cup (115g) butter for creaming
  • 0.5 cups sugar 1/2 cup (100g) sugar for the cake batter
  • 2 large eggs 2 large eggs for the batter
  • 1 tsp vanilla extract 1 tsp vanilla extract for flavoring
  • 1 tsp baking powder 1 tsp baking powder for leavening
  • 1 cup ground poppy seeds 1 cup (140g) ground poppy seeds for filling
  • 0.5 cups sugar 1/2 cup (100g) sugar for the filling
  • 1 cups milk 1 cup (240ml) milk for the filling
  • 0.25 cups semolina or fine wheat semolina 1/4 cup (30g) for thickening the filling
  • 1 cup all-purpose flour 1 cup (130g) for crumble topping
  • 0.5 cups sugar 1/2 cup (100g) for crumble topping
  • 0.25 cups cold butter 1/4 cup (60g) for crumble topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until smooth.
  4. Gradually mix in the flour and baking powder until just combined.
Filling
  1. In a saucepan, combine the poppy seeds, sugar, milk, and semolina. Cook over medium heat while stirring until thickened, about 5-7 minutes.
  2. Remove the mixture from the heat and let it cool to room temperature.
Crumble and Assembly
  1. Create the crumble by combining flour, sugar, and cold butter in a separate bowl. Mix until crumbly.
  2. Spread half the cake batter smoothly across the bottom of the prepared pan.
  3. Pour the cooled poppy seed filling over it, then top with the remaining batter.
  4. Sprinkle the crumble mixture evenly on top.
  5. Bake for 40-45 minutes until the top is golden brown and a toothpick comes out clean.

Notes

This Mohnkuchen is great served warm or at room temperature. It pairs well with whipped cream, coffee, or tea. Dust the top with powdered sugar before serving for added appeal. Store leftovers in the refrigerator for up to 5 days, or freeze for up to 3 months.
