  • 4 medium medium waxy potatoes (e.g., Yukon Gold or Linda) Choose quality potatoes as they hold their shape well.
  • 4 slices bacon, diced For a vegetarian version, omit the bacon.
  • 1 large onion, diced
  • 1 tbsp butter For a lighter version, swap for olive oil.
  • 3 tbsp vegetable oil Olive oil can be substituted.
  • Salt and pepper to taste
  • Fresh chives, for garnish Adds color and flavor.

Preparation
  1. Boil the potatoes in a pot of salted water for 10-15 minutes until just tender but not fully cooked. Let cool for an hour before slicing into ¼-inch thick rounds.
Cooking
  1. In a skillet over medium heat, cook the diced bacon until crispy. Remove the bacon from the skillet, leaving the fat behind.
  2. Add the diced onion to the bacon fat and cook until they turn translucent.
  3. In the same skillet, add the butter and 2 tablespoons of oil. Once hot, lay the potato slices in a single layer. Fry until golden brown, about 3-5 minutes per side.
  4. Once the potatoes are cooked, return the bacon and onions to the skillet. Gently toss, season with salt and pepper, and garnish with fresh chives.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, freeze in a single layer before transferring to a bag for up to 2 months. Reheat by sautéing for best texture.
