Dry Ingredients
  • 2.25 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.5 tsp ground nutmeg
  • 0.5 tsp ground cardamom
  • 0.5 tsp ground anise
  • 0.25 tsp ground black pepper
Wet Ingredients
  • 0.5 cup brown sugar
  • 5 tbsp butter
  • 0.25 cup molasses
  • 4 tbsp honey
  • 2 large eggs
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 0.5 tsp vanilla extract

Method
 

Preparation
  1. In a large bowl, mix together the flour, baking powder, baking soda, and spices.
  2. In another bowl, cream the brown sugar and butter until light and fluffy. Add honey and molasses, mixing well.
  3. Add the eggs one at a time, mixing after each addition until the mixture is glossy.
  4. Gradually stir the dry ingredients into the wet mixture until a cohesive dough forms.
  5. Cover the dough and refrigerate for at least 1 hour.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Roll the chilled dough into 1-inch balls and place them on a prepared baking sheet.
  3. Bake for 10-12 minutes; the cookies will firm up but remain soft when out of the oven.
  4. Once cooled, whisk together the powdered sugar, milk, and vanilla extract until smooth. Dip the tops of each cookie into the glaze and let it set.

Notes

Store cookies in an airtight container in the fridge for up to one week. Freeze wrapped individually for up to three months.
