Ingredients
  

Berry Mixture
  • 500 g mixed berries (raspberries, strawberries, blackberries, blueberries) Fresh or frozen berries can be used.
  • 150 g sugar Adjust sweetness to taste.
  • 125 ml water
  • 2 tablespoons cornstarch Can be substituted with tapioca starch or arrowroot powder.
  • 1 teaspoon vanilla extract Use vanilla bean for enhanced flavor.
Vanilla Sauce
  • 250 ml milk Use coconut milk for a dairy-free option.
  • 1 large egg yolk Can be replaced with ground flaxseed and water for vegan version.
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation of Berry Mixture
  1. In a pot, combine the mixed berries with sugar and water. Bring to a gentle simmer for about 5 minutes, stirring occasionally.
  2. Avoid boiling vigorously to prevent the berries from breaking down completely.
Thicken the Berry Mixture
  1. In a small bowl, mix the cornstarch with some cold water. Add to the simmering berries and cook until it thickens, about 3-4 minutes.
  2. The mixture should coat the back of a spoon.
Add Vanilla and Cool
  1. Remove the pot from heat and stir in the vanilla extract. Allow the mixture to cool before refrigerating for about 2 hours.
Prepare Vanilla Sauce
  1. Gently heat the milk in a pot. In a separate bowl, whisk the egg yolk, sugar, and vanilla extract together.
  2. Gradually add the warm milk to the egg mixture, whisking continuously to prevent curdling.
Thicken the Sauce
  1. Return the mixture to the pot and cook over low heat until thickened, around 5 minutes.
  2. Avoid overheating which could result in scrambled eggs.
Chill the Sauce
  1. Allow the vanilla sauce to cool before serving.
Serve
  1. Place the berry pudding in bowls, drizzle with vanilla sauce, and enjoy.

Notes

Rote Grütze can be served with granola or a slice of cake. For visual appeal, use clear glass bowls to showcase the berries. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to a month.
