Ingredients
  

Marinade
  • 1 cup red wine vinegar or apple cider vinegar Use balsamic vinegar as a substitute for different flavor.
  • 3 cups water
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon sugar Reduce for a lighter version.
  • 1 teaspoon whole cloves
  • 1 teaspoon whole allspice
  • 1 teaspoon black peppercorns
Main Ingredients
  • 3-4 pounds beef rump roast or chuck roast Choosing quality cuts is essential.
  • 2 tablespoons vegetable oil
  • 1/2 cup crushed gingersnap cookies Gluten-free option is available.
  • 2 cups beef broth Substitute with vegetable broth for vegan version.
  • 2 tablespoons butter
  • 2 tablespoons flour

Method
 

Preparation
  1. In a large bowl, combine the vinegar, water, sliced onion, minced garlic, sugar, bay leaves, cloves, allspice, and peppercorns.
Marination
  1. Place the beef in a large non-reactive container and pour the marinade over it, ensuring it is fully submerged. Cover and refrigerate for 3 to 5 days, turning the meat once or twice each day.
Cooking
  1. Once marinated, remove the beef from the marinade and pat it dry. Heat vegetable oil in a large pot over medium-high heat, then sear the beef on all sides until browned.
  2. Add the marinade and beef broth to the pot, bring to a simmer, then reduce heat, cover, and cook for about 3 hours until the meat is tender.
Sauce Preparation
  1. Remove the beef and strain the marinade into a bowl, discarding solids. Return the strained liquid to the pot, and bring it to a simmer.
  2. Stir in the crushed gingersnap cookies and mix butter and flour into a paste before adding it to the sauce. Cook until thickened.
Serving
  1. Slice the beef and serve it with the sauce drizzled over the top. Pair with potato dumplings or red cabbage.

Notes

Best marinated for at least three days for optimal flavor. Store leftovers in an airtight container for up to 4 days.
