Method
Preparation
- In a small bowl, mix warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg until well blended.
- Once the yeast has activated, stir in melted butter. Add this mixture to the flour mixture and combine until a dough forms.
- Gently fold in your choice of dried fruits and nuts until evenly distributed.
- Turn the dough out onto a floured surface and knead for about 5-8 minutes until smooth and elastic.
First Rise
- Place the kneaded dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Shaping and Second Rise
- After rising, punch down the dough to release air and shape it into a loaf.
- Place it in a greased loaf pan or on a baking sheet lined with parchment paper.
- Cover the shaped loaf with a cloth and allow it to rise for another 30-45 minutes, until notably risen.
Baking
- Preheat your oven to 350°F (175°C). Bake for approximately 30-35 minutes, or until golden brown and hollow when tapped.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and serve!
Notes
Use fresh yeast for better rise and flavor. Allow adequate rising time for a fluffy texture. Experiment with different spices for variety.
