Ingredients
  

Meat and main ingredients
  • 1 lb ground beef Opt for quality cuts for best flavor.
  • 1 lb ground pork Quality cuts recommended.
  • 1 onion, diced and caramelized Adds sweetness to the meatloaf.
  • 2 slices stale bread, soaked in milk Adds moisture; consider gluten-free if needed.
  • 2 eggs For binding the mixture.
  • 2 cloves garlic, minced For flavor.
  • 1 tsp salt
  • ½ tsp pepper
Glaze ingredients
  • ¼ cup ketchup For the glaze.
  • 2 tbsp brown sugar To balance the acidity of ketchup.
  • 1 tsp Worcestershire sauce For added flavor; can substitute if needed.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, caramelize the diced onions over medium heat until golden brown, about 10 minutes.
  3. Soak two slices of stale bread in milk until soft.
Mixing
  1. In a large bowl, combine ground beef, ground pork, caramelized onions, soaked bread, eggs, minced garlic, salt, and pepper. Mix gently with hands.
Shaping and Glazing
  1. Form the mixture into a loaf shape and place it in a greased loaf pan.
  2. Spread the ketchup glaze over the top, followed by a sprinkle of brown sugar.
Baking and Resting
  1. Bake in the preheated oven for 60-70 minutes, until the internal temperature reaches 160°F (71°C).
  2. Let the meatloaf rest for about 10 minutes before slicing.

Notes

For added flavor, incorporate fresh herbs. Minimize overhandling the meat. Allow resting post-baking for juicy slices.
