  1. Start by ensuring your work surface and any tools are clean and dry.
  2. In a large bowl, mix the almond flour and powdered sugar together until well incorporated.
  3. Pour in the egg white and mix with a spatula or your hands until combined; the mixture may be crumbly at first but will come together.
  4. If using, add the almond extract to your mixture and knead until smooth.
  5. Transfer the mixture to a clean, dry surface. Knead the marzipan for about 2 minutes, adding powdered sugar if it feels too sticky.
  6. If you wish to color your marzipan, divide it into sections and add a few drops of food coloring to each section, kneading until the color is uniform.
  7. Shape the marzipan into your desired forms, whether small balls, decorative leaves, or festive figures.

Notes

Sift the powdered sugar to remove lumps and ensure smooth marzipan. Store tightly wrapped in plastic wrap and in an airtight container to keep it fresh for weeks.
