Preparation
  1. Season the veal cutlets on both sides with salt and pepper.
  2. In separate shallow bowls, place the flour, beaten eggs, and breadcrumbs to create your breading station.
  3. Dredge one cutlet at a time in flour, shaking off the excess.
  4. Dip the floured cutlet into the beaten eggs, letting any extra egg drip off.
  5. Coat the cutlet in breadcrumbs, pressing gently to ensure they stick.
Cooking
  1. In a large skillet, heat the butter or oil over medium-high heat until shimmering.
  2. Fry the breaded cutlets for about 2-3 minutes on each side until deep golden brown, ensuring not to overcrowd the skillet.
  3. Transfer the schnitzels to a plate lined with paper towels to absorb excess oil.
Serving

Notes
