  • 2 lbs Wildschwein, gewürfelt Wild boar, diced
  • 2 pieces Zwiebeln, gehackt Onions, chopped
  • 2 pieces Karotten, in Scheiben geschnitten Carrots, sliced
  • 2 EL Tomatenmark Tomato paste
  • 1 cup Rotwein Red wine
  • 2 cups Rinderbrühe Beef broth
  • 2 TL Paprika Paprika seasoning
  • 2 pieces Lorbeerblätter Bay leaves
  • to taste Salz und Pfeffer Salt and pepper

Method
 

Preparation
  1. In a large pot, heat oil over medium-high heat. Add the wild boar pieces and brown them until nicely seared, about 8 to 10 minutes.
  2. Once the meat is browned, add the chopped onions and sliced carrots. Stir them in and let them cook for about 5 minutes until the onions become translucent.
  3. Mix in the tomato paste and paprika, stirring until the ingredients are well combined.
  4. Pour in the red wine and beef broth, then toss in the bay leaves. Bring the mixture to a boil, then reduce heat to low.
  5. Simmer uncovered for 2 to 2.5 hours. Taste the gulasch and season it with salt and pepper to your liking before serving.

Notes

Wild boar gulasch pairs beautifully with spätzle or potato dumplings. Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the gulasch for up to 3 months.
