Ingredients
  

Main Ingredients
  • 2 pieces boneless beef steaks (sirloin or ribeye) Look for well-marbled beef for maximum juiciness.
  • 3-4 medium yellow onions, thinly sliced Half will be used for topping.
  • 2 tbsp all-purpose flour Can substitute with gluten-free flour.
  • 2 tbsp butter Can substitute with vegan option for a dairy-free dish.
  • 2 tbsp oil Plus more for frying.
  • 1 cup beef broth Homemade broth is preferred for better flavor.
  • 0.5 cup red wine Can substitute with 2 tbsp red wine vinegar.
  • to taste salt and pepper Season to taste.

Method
 

Preparation
  1. Slice all the onions thinly. Set half aside for the crispy topping.
  2. Toss half of the sliced onions in 1 tablespoon of flour. Heat oil in a small pan over medium heat and fry the onions until golden and crisp. Drain on paper towels.
  3. Season the beef steaks generously with salt and pepper. Dust lightly with flour.
Cooking
  1. Heat 1 tablespoon of oil and 1 tablespoon of butter in a skillet. Sear the steaks for 2–3 minutes on each side until golden brown. Remove and keep warm.
  2. In the same pan, add the remaining sliced onions. Cook for 10–15 minutes until soft and golden.
  3. Deglaze the pan with red wine or vinegar and reduce by half.
  4. Stir in the beef broth and bring to a gentle simmer. Return the steaks to the pan and let them simmer for another 5–10 minutes.
  5. Season the sauce to taste with salt and pepper.
Serving
  1. Plate the steaks, pour the onion gravy over, and garnish with crispy onions. Serve immediately.

Notes

Zwiebelrostbraten pairs well with roasted vegetables or creamy mashed potatoes. Store leftovers in an airtight container for up to three days or freeze for up to three months.
